Food for my Soul!

My older son, Wesley and his girlfriend did the Tsisikamma Waterfall Zipline this weekend!

As for mom, look out for my beautiful 'cupcake' tea cosy I crotcheted this weekend! And lots of baking,too!
Jarryd is writing exams for the next two weeks, so it's hush- hush and lots of foodie treats for everyone!

I long to accomplish a great and noble task, but it is my chief duty to accomplish small tasks as if they were great and noble!

A Beautiful Mother's Day.

Simple pleasures.

Lunch under the trees in my garden.
Roses
Steak on the braai only how my darling can!
My family all gathered around
Chocolate cake to die for!
Then these little darlings for an apertif!
Sweetcorn Fritters with Mascarpone and strawberries!
1 tin of sweetcorn kernals
1cup of cake flour
1 tsp baking powder
pinch of salt
1 egg
1/2 cup milk
1 T oil
3 or 4 fresh strawberries
castor sugar
6tsp mascarpone cheese

Sift dry ingredients together. Add egg and drained corn. Then milk to form a runny batter. Heat the oil and drop tsps' of batter into the frying pan. Fry 'til golden and assemble. It takes +-1min either side to fry. Stack, add mascarpone to tops of each pile and top with a stawberry! Dust with icing sugar.

Food for my soul!

Our Ironman with a heart of gold! Well done Wes, we are proud of you!

A beautiful cake for you!

Ingredients: ~
250g butter
1 tsp vanilla
11/2 cup coffee
200g good quality dark chocolate
400g sugar
2 eggs
180g sifted self raising flour
20g sifted cocoa
Icing ~
3/4 cup cream
200g drk chocolate
2 T Bailey's or Amlarula Cream

Method~
Preheat oven to 170 Cel. Grease a tin. Let the vanilla and coffee simmer for a while. Add butter,chocolate and sugar and continue to heat until choc and butter have melted. Pour this into a mixing bowl and whisk in eggs. Fold in sifted flour and cocoa and pour into greased tin. Bake for 1 to 1 1/2 hours til skewer comes out clean. When cooled, turn out and drizzle with chocolate ganache.
