Iced Strawberry Terrine.

A wonderfully refreshing dessert that is ideal served after the braai!

The Recipe!
400g ripe strawberries (hulled)
400ml good quality vanilla ice cream
meringue nests (crumbled)

Method!
Line a 900g loaf tin with cling film. Using a potato masher, mash the strawberries lightly until they resemble a rough puree. Add the ice cream and continue mashing until there are swirls of pink, white and red!
Gently stir in the crumbed meringue nests. Spoon into the lined loaf tin pressing into the corners and fold the cling film over the top.

Freeze for at least 4 hours or overnight. Remove from the freezer. Shake the tin and run a knife around the edges to dislodge from the tin. Remove the cling film.
Serve sliced with fresh strawberries and mint leaves.

Serves 8 to 10 people.

Spring Trayscape!

It's certainly a wonderful time of the year in my garden! I have a few secret garden spots where I escape too when I need a moment of  solitude!

Today is such a day! I need the peace and quiet of this spot, time to reflect and to indulge myself a little!

Here is a little peak....

Green tea, iced lemon and mint water and a slice of last night's left-over Caramel Tart!

Yellow glassware for my lemon water!

Vibrant spring posy....

Detail of the Victoria cup and saucer that was the inspiration for my spring trayscape!

And detail of my tray....I love the little acorns!

Food for my Soul! The Letting go!

I'm hurting at the moment....it's hard to dislodge homebound sons...like kittens...that hang around the back door waiting for that bottomless saucer of milk....but to let them stay year after year, especially if they are not seizing that all important career goal, is to cultivate irresponsibility and dependancy. And that's not love, even though it might very well feel like love!

The time has come for me to hand over the reins to my son, gently yet forthrightly, and force him to stand on his own.
Good luck, my son....

Food for my soul! (for my son!)

Every now and then life throws us a curve ball....and there are decisions that have to be made!

Matthew 6: 30 says: "So don't be anxious about tomorrow. God will take care of your tomorrow too.
Live one day at a time."

Much love
Mom
