A special little cake!

I found it here......it's an explosion of tastes.....

Here is the recipe.........

Strawberry Cream Cheese cake
Ingredients~
21/4 all purpose flour
3/4 cup sugar
3/4 cup cold butter
1/2 tsp b/powder and
1/2 tsp b/soda
1/2 tsp salt
3/4 cup sour cream
1 egg, beaten
Filling~
1 250g cream cheese, softened
1/2 cup sugar
1 egg
1/2 cup strawberry jam (original says raspberry)
1/2 cup slivered almonds
Icing sugar for dusting if you like
Directions~
1. In a large bowl combine flour and sugar. Cut butter in until mixture crumbly. Remove  1 cup and set aside for topping.
To remaining, add baking powder and soda and salt..
Add sour cream, extract and egg. Mix well and spread in the bottom and 2" up the sides of a 9" springfoam pan.
2. To make the filling, beat cream cheese, sugar and egg in a small bowl until blended. Pour over the batter. Spoon jam over the top. Sprinkle with almonds and reserved crumbs.
3. Bake at 190 deg C for 55 to 60 mins. Let stand for 15 mins. Carefully run a knife around the sides to loosen. Remove the sides. Dust with icing sugar if necessary.
The recipe yeilds 8 pieces.
I served it warm with custard as a dessert.
Thank you Monique......delicious.

Sunday! Food for the soul.

Whilst our rain was gratefully received and hopefully our water restrictions will be lifted....one has to spare a thought for some less fortunate people like the Missionvale area in Port Elizabeth.

Breakfast in bed ~

Nothing beats waking up to a tray of coffee and pancakes♥, especially in this icy cold weather.......

Someone needed a little spoiling this morning.....

I cheated and used a packet of pancake mixture...truely they were the lightest pancakes.... a big shout out to Sasko!

With a dusting of cinnamon sugar and a squeeze of lemon....

Definately slipper and glove weather here today.....

Hopefully the drought that lasted 2 years will be broken soon!!

Glorious RAIN!!!!
