I'm Inspired!

Simply, simple Cheese and Bacon Pies for Wes and Jarryd!
Ingredients:

Ready made puff pastry
2 tbsp butter
2 tbsp flour
2 cups milk
salt, ground pepper, touch of nutmeg
1 cup of good strong cheddar cheese
250g streaky bacon

Method:
Roll out pastry and cut into 6 rectangles of equal size.
Make a cheese sauce with the first 5 ingredients and spices. The sauce must be thick.
Fry the bacon and cut into bite size pieces.
Place a tablespoonful of the mixture onto the one half of each rectangle and fold over and secure the ends.
Wash with beaten egg.
Bake in an oven at 220 degree C for 15minutes until golden brown.

My home is coming alive and I'm feeling rejuvinated.The winter blanket that cocooned it is finaling been lifted! I feel ready for some spring-cleaning action; baking, cooking, sundrenched bedrooms, braais, suntanning and a world of colour!

My little one-legged wagtail friend chirps every morning at our bar room door for his little bite of cheese! Chloe (the retriever) is desperate to take a bite!



My idea of a lazy Sunday afternoon would be a lunch in my garden accompanied by good friends and a chilled bottle of Chardonnay or two and a slow roasted Karoo leg of lamb stuffed with Rosemary and garlic, a wonderful quiche, Mediterranean grilled veggies and a sour dough bread with lashings of olive oil and balsamic vinegar! Ahhh.





I'm so content that we have returned to our old home near the sea and hopefully will be here for a while! It's not our most modern home; in fact, it needs some repairs to certain areas but it certainly exhumes character and if only these walls could talk! Our children are the happiest in this home...a Friday evening always starts with my husband lighting a fire for a braai! No -one can braai a steak like he can. My garden is just another room of our home...here we sit and dream, have a pre-dinner drink and snack whilst we await that delicious steak. It is served simply with a hot baguette, fresh sliced tomato and a good onion marmalade. Made for relaxation, to just chill!



I always like to set my table as this is where I can catch up with my hectic family, share in their week, offer advice and then there's that endless dreaming...people who dream the most do the most! I take great care to cut some blooms from the garden, a sprig or 2 of rosemary, some old silverware and white plates and then a beautifully white starched cloth and white serviettes.






Oh what bliss!

Little Livvy!


What would life be without friends! I have made some really good ones and as I journey through what I like to refer to as the "sandwich era" , ie :rearing your children and caring for your parents as well; I am so blessed to have really special friends who support me.



On the 2nd September, my friend's daughter was blessed with a precious little girl weighing 3,88kg! That's huge and she is SOOOO tiny! The birth was complicated, but she came through by the grace of God!

To all the family, congratulations and may she bring you all much joy!
