Butternut, Blue Cheese and Pesto Lasagne~

This makes a lovely change from the traditional......but not for the younger ones....at least not in my home..


The Recipe~

750ml bechamel sauce
250g lasagne sheets
4 - 6 cups of roasted butternut
2 tbsp basil pesto
100g blue cheese grated
250ml parmesan and cheddar combined, grated
2 tbsp olive oil

Preheat the oven to 180deg C
Toss the roasted butternut cubes in olive .
Pour a thin layer of bechamel sauce in the bottom of the ovenproof dish
Place a layer of lasagne sheets over the sauce. Spread half of the butternut over the lasagne and spoon pesto randomly.
Sprinkle over a third of the blue cheese.
Repeat once more, ending with the bechamel sauce.
Sprinkle the parmesan/cheddar over the top. Bake 30 ~40 mins.
Remove and stand for 10 mins before serving....
I served it with rocket leaves tossed in truffle infused olive oil!

A lunch fit for a queen~

We have this very affordable home-store here in South Africa....I enjoyed playing with their dishes.....I love the textures and  ironstone rubbing....as detailed here....


 So relax for a minute or two and come along and enjoy with me.......


These roses are truely a statement on their own.....you can see more of them here..





While I was doing this...couldn't help dreaming of that island holiday...hint,hint!!!

Ginger and Strawberry Jam...

It's warm, aromatic and smacks of winter....just perfect for this cold snap.......


Ginger and Strawberry Jam............. easy to make....


The recipe....
500g strawberries, washed and hulled
zest and juice of 1/2 a lemon
400g castor sugar
2 tbsp fresh ginger, crushed

Place the strawberries, lemon juice and ginger in a large pot and stir over a low heat until the sugar has dissolved. Then increase the heat to medium and cook, stirring continuously for about 20 - 30 mins. Turn up the heat to between med and high and allow to boil rapidly for about 15 mins, stirring occasionally.
Spoon the jam into warm jars and let it cool before sealing.



   In a beautifully adorned "lemon" cup!
