Asian Grilled Salmon.


The Recipe courtesy Yvonne's Weekly Menus....

1 large salmon fillet cut into 4 servings
2 Tbls Dijon Mustard
3 Tbls soy sauce
3 Tabls teriyaki sauce
3 garlic cloves, crushed
1 spring onion, diced
salt and pepper

Preheat the grill.
Mix mustard, soy sauce, terriyaki,, green onion and garlic in a bowl.
Salt and pepper the salmon and lay it in a large dish. Pour 1/2 the marinade over the salmon, move it around to ensure the bottom is covered with marinade and let the salmon sit in the marinade for about 1/2 hour.

Remove from the marinade and place under the grill. Put the flesh side down on the grill. Grill for 4 -5 minutes. Lift salmon and flip over. Cook a further 4 to 5 minuts.
Remove from the grill when the centre of the salmon is still a little raw. Put on a serving platter and cover with foil to allow it to continue cooking. Leave it for about 5 minutes.  Pour remaining marinade over the salmon and serve immediately......
a green salad and  mashed potatoes is an excellent accompaniment.

Food for my soul! ♥

   the sun's beginning to disappear behind a dark cloud.....


   A spot of tea and lemon loaf while I do some planting.......







This loaf tastes even better with a lashing of butter... (not good for my hips!!)

     And these happy faces all on the same bush.....a new type perennial petunia...




And my favourite...Margaret Roberts Lavendar.... all makes for a good place to hang one's gloves up!!

juice of  2 lemons and I added the juice and zest of an orange
150g sugar
150g butter
4 eggs
250g flour
15ml baking powder
pinch of salt

Preheat oven to 180 degree C
Grease a loaf tin
Beat the butter and sugar til pale and creamy
Add the eggs, one by one, beating well after each addition.
Sift the flour, baking powder and salt and fold into the butter mixture.
Add the juice and mix.
Pour batter into greased loaf tin and bake around 30min at 180degree C.

I then tweeked the recipe....
Heat the juice of 2 lemons, zest of one lemon and a cup of sugar until thick and syrupy.
Pour over the hot cake.

Ina Garten's Irish Soda Bread.

Such an easy loaf....even I could make it....








Here goes the simple recipe....

Ingredients:
4 cups all-purpose flour
4 tablespoons sugar
1 tsp baking soda
11/2 tsp salt
4 tablesppons cold butter, diced
13/4 cip cold buttermilk
1 extra large egg, lightly beaten
1 tsp orange zest.

Method:
Preheat over to 180deg C
Combine the dry ingredients in the bowl of an electric mixer with the paddle on. Add the butter and mix on low til incorporated.
With a fork, lightly beat the buttermilk, egg and zest together. With the mixer on low, add slowly to the flour mixture. This dough will be very wet.
Pour onto a floured surface and knead a few times til in the shape of a round loaf.
Place on a greased baking sheet. Cut a x gently on the top and pop in the oven for around 45 minutes or until skewer comes out clean. When you knock the loaf it must sound hollow.
Cool on the baking rack. Serve warm with butter and jam!



I wish you could smell the fragrance of that orange zest.....a wonderful aroma that's filled my home!
And really easy!

Chicken and Mushroom Cobbler for the icy weather!.....comfort food:)

A hearty, easy meal to warm you as we head into winter!



 






The Recipe.....
1 tablespoon oil
2 leeks trimmed and slices
3 sticks celery
6 chicken breasts cubed
250g mushrooms
200m lchicken stock...I used the broth of a chicken I cooked earlier
200ml creme fraiche
salt and freshly ground pepper
For the Scone topping:
250g self raising flour
1/2 tsp baking powder
75g cubed butter
2 courgettes grated
pinch of cayenne pepper
100ml milk
beaten egg to glaze
Method:
Heat the oil and gently braise the leeks and celery. Add the chicken if not cooked already. Add the mushrooms, stock and creme fraiche. Stir well, season and simmer for 10 minutes until all cooked through.
Transfer to oven proof dish.
Preheat the oven to 200deg C. Mix all the dry ingredients fot the scones and rub in the butter with your fingertips...to resemble fine breadcrumbs. Stir in the corgettes and cayenne.Add enough milk to form a soft dough.
Lightly roll out onto a floured surface about 1,5cm thick. Cut into rounds 5cm.'s. Arrange ontop of the chicken mix. Brush with egg and bake for 30 min til nicely risen and browned.
Serve with mashed potatoes and veg.
Heaven on a plate!

An Easter Surprise Package!

By  far one of the kindest people  I have met through my blog.....this huge spoil arrived 2 days after Easter....
a beautifully handstitched, precious bag with so much detail...all the way by snailpost from Canada....you can find Monique  here......but I know those that read my blog have all met this gracious lady already.....


Just look at this beautiful bag......it will hold precious old jewellery from my mom.....and memories......

        


Attached, the happiest Easter greeting card....this is all joy, absolutely to me.....




I love the earthy textures of these photos of the table, the bag and the fynbos......


   My " fynbos" Easter bunny sits guarding my entrance at my waterfall.......

Good Friends are like stars....You don't always see them but you know they are always there.....I am truely blessed to have them.
