Here goes the simple recipe....
Ingredients:
4 cups all-purpose flour
4 tablespoons sugar
1 tsp baking soda
11/2 tsp salt
4 tablesppons cold butter, diced
13/4 cip cold buttermilk
1 extra large egg, lightly beaten
1 tsp orange zest.
Method:
Preheat over to 180deg C
Combine the dry ingredients in the bowl of an electric mixer with the paddle on. Add the butter and mix on low til incorporated.
With a fork, lightly beat the buttermilk, egg and zest together. With the mixer on low, add slowly to the flour mixture. This dough will be very wet.
Pour onto a floured surface and knead a few times til in the shape of a round loaf.
Place on a greased baking sheet. Cut a x gently on the top and pop in the oven for around 45 minutes or until skewer comes out clean. When you knock the loaf it must sound hollow.
Cool on the baking rack. Serve warm with butter and jam!
I wish you could smell the fragrance of that orange zest.....a wonderful aroma that's filled my home!

You know I've never made soda bread but I've wanted to. I love the idea of the orange zest in it! Looks so good.
