Wesley's Chicken Pasta

Our little French Chef at Solomon is missing one of his favourite kitchen raiders! He posted this pasta for Wesley's new bachelor pad!♥

A simple pasta put together in less than half and hour!
This will be the first of a few simple meals for the benefit of my son to russle up after a long day.
The Recipe.
500g chicken breasts(skinless)
1 onion diced
1 sweet pepper diced
a tsp of garlic crushed
1 pkt of Knorr Chicken a la king powder
500ml milk
250g pasta (penne is his favourite)

Fry the diced chicken breasts with the onion, garlic and peppers in a little oil.
Boil the pasta until al dente (just cooked) in salted water.
 Drain the pasta off.
Make the sauce according to the directions on the packet. Pour over the chicken and veg and thoroughly coat. Simmer for a few minutes (about 5 minutes) .
Pour this mixture over the pasta and toss.

Top with finely grated strong extra mature cheese of your choice and salt and freshly ground pepper.

Precious Blue platters~♥

These are so special....whilst packing up my dear old dad, my sister-in-law♥

 and I had the privilege of sharing my late mom's beautiful blue china she had collected from her travels....she so loved blue~♥


Whilst I know it is traditional to use red and white for Christmas, I might team some of these platters with white for a Christmas table this year...~♥


The tablecloth and napkins are from Venice....


The delft pewter teaspoons from Holland...


And the platters from Stoke-on-Trent...Johnson factory....all these tresures are around 30 years old!

Dinner for my men and a Special Cake...


Simply chicken and veg baked the healthy way, in it's own juices at 180 C in the oven until succulent.I used a tsp paprika, thyme, onion flakes and 4 fresh cloves of garlic along with salt and pepper to give it wonderful warm aromas....delicious!

Then for that wonderful cake!

Ingredients:
1/2 cup marg
1 cup sugar
2 eggs beaten
2 TBSP milk
1 cup sour cream
2 cups flour
1 tsp baking powder
1tsp baking soda
150g milk chocolate buttons
2 tsp cinnamon
1/2 cup sugar.
The last 2 items are for the top/crust
Grease and flour baking tins. Cream sugar and marg til creamy..and add eggs. Mix til light and fluffy.
Sift the dry ingredients except the last two. Set aside. Mix milk and sour cream. Add the milk mixture  alternately with the dry ingredients to the egg/butter mixture. Spoon half into the prepared tins. Sprinkle the cinnamon/sugar over this then add the rest of the butter and then the cinnamon/sugar remainder on top.
Bake at 180 C for 25 minutes. Cool on a wire rack.
 I made two cakes with this batter... one for us and the other for my older son's pad! Decorate with some more chocolate discs.

I've missed you!

I have missed you all so much......

You see, my father is very frail now! So sad to see such a once strong man being consumed by so much pain.
We have settled him closer to us.....in my flat alongside my home... where he can see the comings and goings of his family or sit outside and enjoy his surroundings!
I have been busying myself with  gardening, decorating and finishing my porch in time for Christmas....to recharge!

I would not have been able to find the energy or the will without my Faith and Love for God in this changing season of my life.
