Asian Grilled Salmon.
The Recipe courtesy Yvonne's Weekly Menus....
1 large salmon fillet cut into 4 servings
2 Tbls Dijon Mustard
3 Tbls soy sauce
3 Tabls teriyaki sauce
3 garlic cloves, crushed
1 spring onion, diced
salt and pepper
Preheat the grill.
Mix mustard, soy sauce, terriyaki,, green onion and garlic in a bowl.
Salt and pepper the salmon and lay it in a large dish. Pour 1/2 the marinade over the salmon, move it around to ensure the bottom is covered with marinade and let the salmon sit in the marinade for about 1/2 hour.
Remove from the marinade and place under the grill. Put the flesh side down on the grill. Grill for 4 -5 minutes. Lift salmon and flip over. Cook a further 4 to 5 minuts.
Remove from the grill when the centre of the salmon is still a little raw. Put on a serving platter and cover with foil to allow it to continue cooking. Leave it for about 5 minutes. Pour remaining marinade over the salmon and serve immediately......
a green salad and mashed potatoes is an excellent accompaniment.
