A delicious sponge~

I  have been enjoying viewing BBC Food and Lifestyle, in particular the series on the delicious Miss Dahl....
she embraces femininity and she is an excellent cook....I loved her recipes on Nostalgia.......
here is her delicious Victorian Sponge Cake ~ it is light and fluffy and easy peasy~


the recipe~
225g castor sugar
225g butter
225g self raising flour
zest of 1 orange
4 eggs

Blend together the castor sugar and  the butter 'til  light and fluffy. Add the sifted flour.
Whisk the 4 eggs together in a bowl and then add to the mixture.
Grease and flour 2 cake tins. Bake in the oven at 180deg C for 25 to 30 minutes.
Ice when cooled as desired.

    Thank you for your sweet message. I always use google to convert. They are pretty good.
    Castor is a refined white sugar here in SA...not the same as powder sugar though.
    Where have you moved to...and hope you are all settled?
