Blueberry Friands and my garden of the blues~

Such a quick teatime treat!!
I found the recipe in the latest Food and Home....


Recipe~
120g castor sugar
1/4cup cake flour
100g ground almond
pinch of salt

120g melted butter beaten
3 large eggs, lightly beaten
100g blueberries, drained
icing sugar for dusting

Mix sugar with flour, almonds and salt.
Gradually fold in butter to the mixture, alternating with the eggs until you have a smooth batter.
Preheat oven to 180deg C
Pour the batter into a 6 hole friand tin..(I used the large size muffin tin)...until it comes 3/4 up to the top.
Spoon berries into the centre and bake 'til cooked, about 15-20 min.
Cool and dust with icing sugar...eat whilst fresh and warm!

  3. They do look good..I love the dusting of Icing Sugar on top..Almond..is a winner taste for us..I made little acorns this weekend w/ almond extract..and my daughter..just like us..loves them..Blueberries and almond? well you know we like that too..
    I am trying to remember the name of the blooms in your first bouquet! I used to buy them for indoors:)

    Anything blue is so pretty..except blue roses..not natural to me..
    Your lavender is beautiful..the pool setup..

  4. They are lovely...I just made a mistake..I used frozen berries....not as good as fresh!
    will you do a post of the little acorns...i recall an earlier post...you are sooo good with your ideas xx
    Cinnerarias...i thk is the name you looking for...we call them that here in SA....they grow so well under my palm trees at spring...I'm waiting patiently for foxgloves and roses to flower now...
